Then it isn't your idea. The makers of FoF thought of it first.
And, beating songs on easy is somewhat of an ego boost. And really, people will only want to watch if your doing some crazy fast song.

That doesn't necessarily mean that Activision and the others (I'm terrible at memorizing names) can't try it. I mean, almost every console GH3 came out on has some sort of Internet access, so I thought "Why not? It probably couldn't hurt the franchise." Sooo, yeah.
I suck at the game, and I don't think that feature would make it easier.
It's not about making the game easier. It's about making it more fun to play. I mean, who wouldn't want to play their favorite songs that aren't already in the game?
If you aren't good at the game, then there's a set of tutorials in GH3.
I did the tutorial, and I still sucked. You do have a point there.

It's been done. Search for "Frets on Fire", it's a PC game that is really close to GH (and is free). It uses an OGG format to make the songs, but I'm not sure how it works (if people place the notes themselves, or the game does it).

I know about, FoF. I had this idea at least a week before I'd heard of it. What I was thinking was something to boost their egos by letting them play their favorite songs using something that at least resembled a guitar (as opposed to holding their keyboards upside-down), with an added bonus of letting them show off for their friends on a TV screen (as opposed to them huddling around a computer screen).
